"The Pouilly-Vinzelles controlled appellation is only 50 ha compared to the 750 ha of the adjoining Pouilly-Fuissé AOC. But isn’t that its singularity and its richness? This great white wine from Burgundy expresses the full maturity of Chardonnay from South Mâconnais. Thus our wine is a selection of our “youngest vines” (33 to 50 years old) located in the “Les Quarts” Climat which we “fold” into Pouilly-Vinzelles La Soufrandière AOC Communale. All are magnificently south-east facing, in the middle of a clay-limestone hillside. The soils are plowed and all the work in the vineyard is carried out by hand so as not to compact the soil, which therefore lives without artifice. The term “Terroir” then takes on its full dimension." Manual harvest, pressing in whole bunches, 70% vinified and aged for 11 months in stainless steel vats and 30% in pieces (228 l used barrels).
